Winery

At vintage time the fruit is hand picked into small crates that are manageable by hand. The crates are labour intensive, but they keep bunches and berries intact. They also allow us to effectively chill the grapes if we need to.

We use a sorting table to ensure only the best bunches and berries are selected.

Our concrete vats, with their large thermal mass, facilitate slower and longer temperature changes - ideal for fermentation and ageing. The slightly porous nature of concrete allows a controlled amount of air to interact with the wine, enhancing complexity and texture. The tulip shape promotes natural convection currents and a thicker cap of skins during fermentation.

Having our own bottling line means we bottle when the wine is ready, and it never leaves the property.
